To guarantee a constant quality of our Gourmet oils, we have chosen a state-of-the-art machinery that we have adapted to our specific nuts and seeds. Our main goal is to achieve a perfect quality by a combination of old technics and innovating proceed. In November 2005, we won an award l’ Prix de l’innovation Art’Innov ’.
How do we select our nuts and seeds
Our nuts and seeds are selected on the basis of the following criteria :
an ethic choice : we control the origin of our nuts and seeds, and if necessary, we require a non-GMO certificate. The physico-chemical components of the products are listed then quality rated.
a quality choice : our dried fruits and cereals are sampled and blind-tasted. We measure their moisture content then squeeze the nuts and seeds through a mini oil press. Finally the products, on one side, and the oils, on another side, are analyzed in a laboratory.
How do we produce our oils
Our oils do not undergo any treatment other than those inherent in the transformation and also any chemical treatment. In that way, we get authentic virgin oils for which the identity of the seed or nut is preserved.
1. the grinding adapted to the nut size. The regularity of pieces allows for a uniform heating
2. the heating steam-heating process : low, soft, delicate and uniform, it is used to liberate the fats from nuts and seeds
3. the pressing : a rotative press screw squeezes the nuts and seeds against the press body to separate the oil from the remaining paste (solid phase resembling the texture of dry flour). With the de-oil flour, we cook our biscuits.
4. the filtering : this step allow to liberate small particles fromthe oil. In that way, we obtain a fluid and clear oil.
Our oils are then stored in steel tanks before being bottled in dark bottles. In that way, the aging of the product is strongly slowed.
How to reconize a fine quality oil
If the oil is sticking in your mouth, that it is heavy and fat, it means either it is refined or too old or the nuts were not fresh enough, or again the oil has been strongly heaten during the process of production.
As for the fish, a fine quality oil must be bright and reflect light.
This is the reason why we produce only virgin oil, ie without any chemical treatment or refined technics, cold pressed. Let us remind you that overheating products deteriorates the original nut aromas, alters the oil flavour and destroy the good nutritional facts.
We recommend to use our virgin oils for dressing, as salt and pepper at the end of cooking to preserve the flavours and all the nutritional benefits.
